Olive Garden Tiramisu Dessert
1 Sponge cake (10-12 inch) -- About 3" tall
3 oz Strong black coffee -- or Instant espresso
3 oz Brandy or rum
1 1/2 lb Cream cheese or mascarpone Room temperature
1 1/2 c Superfine/powdered sugar
Unsweetened cocoa powder
Cut across middle of sponge cake forming two layers, each about 1 1/2 inches
high. Blend coffee and brandy. Sprinkle enough of mixture over bottom half of
cake to flavor it strongly. Don't moisten cake too much or it may collapse on
serving. Beat room-temperature cheese and 1 cup sugar until sugar is
completely dissolved and cheese is light and spread able. test for sweetness
during beating, adding more sugar if needed. Spread cut surface of bottom layer
with half of the cheese mixture. Replace second layer and top this with remaining
cheese mixture. Sprinkle top liberally with sifted cocoa. Refrigerate cake for at
least 2 hours before cutting and serving.

Jerk Seasonings
1/2 cup ground allspice berries [not allspice powder; whole
allspice - ground (use a coffee grinder)]
1/2 cup packed brown sugar
6-8 garlic cloves
4-6 Scotch bonnet peppers (or jalapeno), stems and seeds removed
1 tablespoon ground thyme or 2 tablespoons thyme leaves
2 bunches escallions (green onions)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
salt and pepper to taste
2 tablespoon soy sauce to moisten
Put everything in a food processor and blend until smooth.
Feel free to adjust amount of peppers or garlic.
Rub the meat (chicken, pork or beef) with the seasoning. If using
pork shoulder, score the fat and rub in. With chicken, be sure
to rub under skin and in cavities. Can also be used with fish, but
use a firm-fleshed fish like grouper.
Marinate overnight. Grill over a low fire until done. Charcoal is best,
but not essential. Meat will be smoked "pinkish" when done, and
the skin will be nice and dark. Chop meat into pieces, and serve
traditionally with hard-dough bread and Jamaican Red Stripe Beer.

Storing Cheese:
Store cheese in your refrigerator, which approximates the
temperature of aging rooms. Keep it wrapped tightly in
plastic,
away from air. Air helps mold grow on cheese. If you get a

mold on the outside, just cut it off. The English say if

won't eat your cheddar it can't taste very good.
Bring cheese to room temperature before melting. Melt
cheese
over a low heat to help prevent toughening and separation
of
oils and liquids.
Most ripened or aged cheese is low in moisture content and
can be frozen without drastic flavor and texture changes.
Thaw
slowly in the refrigerator for 24 hours or more. If frozen
for
several months, the cheese may dry out somewhat and become
crumbly when thawed.
