4 salmon steaks, cut 1 inch thick
Place melted butter, lemon juice, salt, fresh chopped dill and red pepper in small bowl and
stir to combine.
Preheat broiler.
Place salmon steaks on lightly greased pan and brush with half of seasoned butter.
Broil, 5 inches from source of heat, 5 to 10 minutes.
Turn heat to 400°F, close oven and bake an additional 5 - 8 minutes.
Brush with remaining butter blend. Serve.
Red Lobster Citrus Couscous
8 ounces dry cous cous
1 1/2 cup water
1 teaspoon fresh chopped dill
1 teaspoon fresh chopped mint
1/2 teaspoon salt
1 tablespoon brown sugar
1/8 teaspoon white pepper
1 tablespoon olive oil
1 can mandarin oranges
Place water, salt, sugar, pepper and olive oil in a sauce pan and bring to a boil.
Remove from heat and add cous cous cover and let stand for about 7 minutes.
Fold in oranges, juice, and fresh herbs.
Let stand for 2-3 minutes.

Pita Bread
2 tsp. dry yeast
1 cup warm water
3 cups flour
1 tsp. salt
Dissolve the yeast in 1 cup warm water. Sift together the flour
and salt and mix in yeast and water. Work the mixture into a
dough and knead for several minutes. Cover the dough with a
damp cloth and let rise in a warm place for 3 hours.
Preheat oven to 350 degrees.
Divide the dough into 6 equal portions and roll into balls. With
either your hand or a rolling pin, pat and press each ball of
dough into a 5-inch circle about 1/2-inch thick. Place on an
ungreased baking sheet and bake for 10 minutes, or until the
pita are light golden brown.
