1/2 ounce shortening
2 (12-inch) flour tortillas
2 tablespoons chipotle sauce (optional)
4 ounces grilled chicken (spicy seasoning optional)
6 ounces Quesa Filling
1 cup shredded lettuce
Sour cream
Green onion
Salsa
Quesa Filling
Jack and Cheddar cheeses
Jalapeño pepper, diced
Tomato, diced
Onion, diced
Cilantro, minced
Bacon, fried and crumbled
Brush one side of each tortilla with shortening. Place one tortilla, shortening side down
on work surface. Spread chipotle sauce evenly on one tortilla. Microwave chicken
approximately 45 seconds, then distribute on top of sauce on tortilla. Evenly distribute
Quesa Filling on top of chicken. Cover with other tortilla, shortening side up. Brown on
griddle or in non stick skillet evenly on both sides until internal Quesa Filling is
thoroughly melted.
Use shredded lettuce, sour cream, green onion and salsa as accompaniments.

Kettle Corn
Place oil and popcorn in a large skillet that has a tight fitting lid.
The popcorn should barely cover the bottom surface. Heat over
medium until the first kernel starts to pop. Quickly stir in the sugar
until dissolved. Cover and continuously shake skillet while holding
top. Be careful, this will burn much quicker than regular popcorn.
When you think all is popped, remove from heat. Spoon the popped
corn into a bowl while shaking once in a while to let the uncooked
kernels settle. Salt lightly, and break up into pieces.

too heavy. Try making the pieces smaller and let them rise longer.

Always remove bread from the pan as soon as taken from the oven. The
crust sweats and may fall. Make sure that you use Bread Flour in the
mix. Weak flour will cause loaves to fall. Make sure the loaves are
done. Thump the top and if the loaf sounds hollow, it is done.
Setting (just baked) loaves in a cool draft of air will sometimes
cause their sides to cave in. When the dough is allowed to rise too
much before baking the loaves will sometimes collapse.
