1/4 ts poultry seasoning
1/8 ts cayenne (adjust to taste);
-(1/8 to 1/4)

1/8 ts onion powder
1/2 c white wine
1 Tbsp garlic powder
1 lb linguine
4 chicken breasts
8 oz shrimp
1 Tbsp olive oil
Mortar spices well. Put cream and milk in pan with butter and 1/2 spice
mixture. Thicken and reduce, and set aside. Cook linguine to the al dente
stage. Sauté‚ chicken breasts with wine and remaining spices until done.
Remove and set aside. Sauté‚ shrimp in pan, adding wine if necessary.
Serve each breast on a bed of linguine with shrimp. Cover with sauce.

Honey Baked Ham Broccoli Souffle
1 pound fresh broccoli
1 large minced onion
3 eggs
2 tablespoons butter
3 tablespoons flour
1 cup hot milk
2 ounces crumbled Roquefort cheese
1/2 teaspoon Tabasco
1/2 teaspoon salt
1/2 cup dried bread crumbs
Preheat oven to 350 degrees.
Wash broccoli, pare any tough skin from stems and cut into pieces. Cook in
salted boiling water for 10 minutes. Drain and squeeze well. Chop in food
processor.
Melt butter and cook onion until soft. Stir in flour. Slowly add milk. Cook
until mixture thickens, stirring constantly. Remove from heat.
Stir in cheese, broccoli and Tabasco. Beat eggs with a little salt. Stir
eggs into cooled broccoli mixture.
Butter baking dish and dust with bread crumbs. Pour mixture into baking dish
and bake for 40 minutes.
